Mango Slaw

  • INGREDIENTS
    • 1 ripe mango – diced
    • 1/4 cup of red onion
    • 3 tablespoons of chopped cilantro
    • 3 tablespoons of lime juice
    • 1 cup of shredded lettuce (can leave out if you want more of a salsa vibe)
    • Optional: 1 diced jalapeño, 1-2 sliced radish
  • Directions:
    • Chop everything up, and put in a bowl. Serve on top of chicken, tacos, salads
  • TIPS: You can buy pre-cut mango (which is more expensive but WAY less work). You could potentially make this with frozen pre-cut mango if it was thawed as well!
  • Pros: This slaw is delicious and full of fiber because it has the combo of fruits and veggies!
  • Cons: It only lasts a few days in the fridge because the lettuce gets soggy quickly, if you are making it for the week, consider mixing in the shredded lettuce daily to prevent this!
