- INGREDIENTS
- 1 ripe mango – diced
- 1/4 cup of red onion
- 3 tablespoons of chopped cilantro
- 3 tablespoons of lime juice
- 1 cup of shredded lettuce (can leave out if you want more of a salsa vibe)
- Optional: 1 diced jalapeño, 1-2 sliced radish
- Directions:
- Chop everything up, and put in a bowl. Serve on top of chicken, tacos, salads
- TIPS: You can buy pre-cut mango (which is more expensive but WAY less work). You could potentially make this with frozen pre-cut mango if it was thawed as well!
- Pros: This slaw is delicious and full of fiber because it has the combo of fruits and veggies!
- Cons: It only lasts a few days in the fridge because the lettuce gets soggy quickly, if you are making it for the week, consider mixing in the shredded lettuce daily to prevent this!
