Asian Chicken Salad

  • INGREDIENTS:
    • 1 can of mandarin oranges- I get the one that is “light syrup”
    • Shredded rotisserie chicken- I use about a handful for the salad
    • 1 bag of ramen instant noodles – uncooked & seasoning packet thrown away
    • 1 bag of “Asian style chopped salad” or if you can’t find that, anything with cabbage, carrots, and shredded lettuce
    • Handful of sliced almonds
    • Handful of cooked, shelled edamame (optional)
    • Ginger sesame dressing (either buy premade or buy a bag of salad that has the dressing included!)
  • DIRECTIONS:
    1. Either open your bag of lettuce or combine your cabbage, shredded lettuce and carrots in a bowl.
    2. Smash the ramen into small pieces
    3. Drain the syrup from your mandarin oranges
    4. Combine everything, eat and enjoy!
  • TIPS: Make sure your cabbage is shredded well before eating, some of the bags can have larger chunks. I would also recommend if you want to meal prep, you wait to combine the dressing until you are ready to eat!
  • Pros: This salad is easy, cheap, and smashing ramen can be therapeutic!
  • Cons: The mandarins are canned, and in a light syrup. You could potentially use fresh orange to overcome this, or just make sure you find the can with the lowest sugar content.
