Greek Inspired Salad

  • INGREDIENTS:
    • Spinach or whatever type of lettuce you have
    • Falafel (I get the frozen kind from Trader Joe’s – takes 1 min in microwave to make!)
    • Cucumber
    • Avocado
    • Bell peppers – 3 bite-sized peppers sliced
    • Hummus
    • Feta
    • Greek salad dressing (in this one I combined the feta and dressing, and had a feta greek dressing!)
    • OPTIONAL ADDITIONS: Tomatoes, red onion, olives, chicken
  • DIRECTIONS:
    1. Slice your veggies
    2. Warm up your protein (falafel or chicken)
    3. Assemble your salad! I put big spoonful of hummus in the middle, and drizzle with dressing
  • TIPS: I almost always add hummus to my salads! It adds extra protein and healthy fats and helps me cut down on the amount of dressing I use. Traditionally, Greek-style salads use tomatoes, onion, and olives and either do not have lettuce, or use more “crisp” lettuce (iceburg). I used spinach in this because it is what I have, and spinach has way more vitamins and minerals in it!
  • Pros: This salad is easy; awesome for meal prep; and you can make it however you like it!
  • Cons: Depending on how many veggies you put in this, there is a lot of chopping involved in this salad.
