Avocado Toast

  • INGREDIENTS:
    • 1 ripe avocado
    • 1-2 slices of whole grain bread
    • Salt, Pepper, Red Pepper Flakes, Olive Oil
    • Crumbly cheese – I used goat cheese or feta for this
    • Balsamic Glaze
    • OPTIONAL ADDITIONS: arugula, eggs, tomatoes, hot sauce
  • DIRECTIONS:
    1. Toast your bread. If you have a pan, you can place the bread on the pan to toast. I cannot confirm or deny that an iron works to toast bread in a pinch as well (just be sure to sanitize it before and after)!
    2. Mash your avocado with a fork on the bread and drizzle olive oil on top.
    3. Top with your favorite seasonings – I used salt, pepper, and red pepper flakes
    4. Top with cheese.
    5. Drizzle with balsamic glaze.
    6. Enjoy!
  • TIPS: If you don’t have a toaster, pop the bread in the microwave for 10-15 seconds to warm up before you make! If you only use half the avocado for this, wrap the avocado tightly and put in the fridge for a future meal.
  • Pros: Yes, this is a basic meal. Super easy and quick, but filling. Healthy fats come from the avocado and olive oil. Good fiber comes from the whole grain bread as well. It is delicious – especially topped with the balsamic glaze (one condiment that I really use all time, but always forget about!). You can make this toast however you like.
  • Cons: Goat cheese and avocados can be expensive! This meal does not travel well and best eaten right away, but could be made into a meal prepped lunch if you need to!
