- INGREDIENTS:
- 1 Sweet Potato
- Shredded chicken (about a handful)
- Shredded cheese (also about a handful)
- BBQ sauce – I used Sweet Baby Ray’s Spicy
- Cilantro
- Optional additions: black beans, jalapeños, cauliflower, avocado
- DIRECTIONS:
- Poke a bunch of holes in the potato; put on a plate and microwave for 4-5 minutes on each side. If it is soft, you can take it out!
- Cut the potato in half, and scoop out the inside. Place the insides in a bowl and mash.
- Mix in cheese, shredded chicken and 3 ish tablespoons of BBQ sauce to the sweet potato mash.
- Place back into the sweet potato, microwave for 10-20 seconds until the cheese is melted.
- Drizzle with more BBQ sauce and cilantro.
- Enjoy!
- TIPS: While I am usually all for meal prepping in advance, this meal is SO quick to make, I recommend making it the night before or day of if you are low on refrigerator space. Sweet potatoes are awesome for clerkships because they are counter-stable and don’t take up fridge space until you cook them!
- Pros: Very durable! Sweet potatoes are one of the easiest vegetables to cook in the microwave. You can eat this sweet potato as a meal on its own, or cut up over over a bed of lettuce for a BBQ chicken salad!
- Cons: BBQ sauce is packed with sugar. Be sure to either limit the amount of sauce used, or find one with good nutrition facts.
