- INGREDIENTS
- 1 ripe banana (the more ripe and mushy, the more sweet it tastes)
- 1 egg
- 1 tsp of plain Greek yogurt
- 2 tsp of olive oil
- 1 spoon full of almond/peanut butter
- 2 tbsp of flour
- 1 tsp of vanilla protein powder (or you can use 1/2 tsp vanilla extract)
- Pinch of salt
- OPTIONAL: extra nut butter, honey, chocolate chips (I used dark chocolate), m&ms, coconut
- DIRECTIONS:
- Mix up everything in a mug, I recommend mashing the banana in first, then adding in the egg, oil, and greek yogurt then mixing all the dry ingredients in. Don’t over mix- you want this to be a bit lumpy!
- Microwave for 90 secs (the muffin will rise!), then 90 seconds more.
- TIPS: USE A BIG MUG- again, the muffin will rise, and you don’t want to overflow your mug into your microwave! Also, if you don’t have a really ripe banana, would I add some honey in this for sweetness.
- Pros: Muffins are one of my favorite foods. Yes, I know they are unhealthy, but they remind me of my childhood. I eat these when I really, really want dessert or baked goods. They are quick and easy, and have a decent amount of protein and healthy fats.
- Cons: When I am traveling, I typically don’t buy flour. If you don’t have flour, you can substitute the flour for rolled oats! Be careful with your toppings as well. M&M’s and other toppings add processed sugar to an otherwise healthier option for dessert or breakfast!
- Sources: A friend sent me a recipe from Skinnytaste for a banana muffin in the microwave that he wanted me to try and replicate. I did not add the sugar, vanilla extract, or baking powder (did not have those in a hotel room!). I added an egg, honey, greek yogurt, and protein powder instead for substitutes!
