Greek Themed Spaghetti Squash

  • INGREDIENTS:
    • Spaghetti Squash
    • Tomatoes (either cherry tomatoes or on the vine diced)
    • Cucumber – sliced
    • Garbanzo beans (drained and rinsed)
    • Feta cheese
    • Salt, pepper, olive oil
    • Optional additions: red pepper flakes, shredded chicken, Greek dressing, avocado, any steamed veggies you want (zucchini, peppers, broccoli!)
  • DIRECTIONS:
    1. Make your spaghetti squash in the microwave according to these instructions (https://cookinginclerkship.com/2020/11/02/spaghetti-squash/)
    2. Cook the garbanzo beans in the microwave by placing on a microwave safe plate, drizzling with olive oil and seasoning of your choice and cook for 3 minutes, then shake and then cook for 3 more!
    3. Assemble your bowl with all the veggies, protein, and feta – top with oil and seasonings or dressing!
  • TIPS: You can use half of your spaghetti squash for a meal and then make something else with the other half or meal prep! If you are planning on using spaghetti squash for meal prep, consider cooking for less time initially because the squash will get more mushy over time.
  • Pros: All of the ingredients in this are super versatile – you can use tomatoes and cucumbers for salads for the week; chickpeas for curry recipes or to make your own hummus. This is a light and filling meal that has lots of fiber and nutrients.
  • Cons: Spaghetti squash only stays for a few days after cooking. Feta cheese can also be expensive!
