- INGREDIENTS:
- 1 Medium spaghetti squash
- Seasoning of your choice (I use garlic pepper)
- DIRECTIONS:
- Poke a ton of holes all around the outside of your squash with a fork
- Place on a plate and microwave for 5 minutes
- Flip the squash to the other side (careful, the squash gets super hot) & microwave for 5 more minutes.
- Let sit in the microwave/on the counter for about 10 minutes
- Cut lengthwise with a knife
- Scoop out the seeds from the center
- There is your spaghetti squash!
- TIPS: If you have a smaller spaghetti squash, you can let the squash sit on the counter for less time. If you are using the squash as a base for spaghetti meal prep, use less sauce because the squash naturally has lots of liquid.
- Pros: I have never had an issue cooking spaghetti squash this way – it is SO easy. I will start cooking in the microwave and then while it is sitting on the counter, I typically have enough time to make the rest of my meal. I use spaghetti squash all the time for a variety of dishes (Italian, Thai, a base for various protein, in my salads…). Plus, it is awesome because I always have enough squash for at least 2 meals! Squash is absolutely packed with vitamins and fiber as well so it is a great alternative to traditional pasta.
- Cons: I find that spaghetti squash gets mushy after a few days, so I would eat this quick- I typically make it for dinner and then have the second half for lunch the next day .
