- INGREDIENTS
- Bag of green beans
- Cherry tomatoes (halved- I used probably 5 tomatoes)
- Sliced mushrooms (2-3 mushrooms)
- Sliced mozzarella (I used like 8 small pieces)
- Red pepper flakes (as many as you want!)
- Balsamic vinegar (2-3 tablespoons)
- Olive oil (1 tablespoon)
- Minced garlic (1 clove)
- DIRECTIONS:
- Microwave the green beans according to the bag instructions
- Mix the oil, balsamic vinegar, minced garlic, and red pepper flakes
- In a bowl, combine green beans, mozzarella, mushrooms and tomatoes and drizzle oil mixture on top
- Mix up and serve! In this picture, I served with some chicken.
- TIPS: You can use an oil-based salad dressing instead of mixing your own!
- Pros: You can make this in your microwave- so easy! You can eat this salad warm or cold. Awesome for meal prep.
- Cons: I love lots of spice, and this recipe doesn’t have much. But, it is light and fresh!
