Ground Chicken/Shrimp Tacos

  • INGREDIENTS:
    • Ground Chicken Tacos
      • 1 lb of ground chicken
      • 1 bell pepper sliced (I used red)
      • 1 can of green chilis
      • Oil (1 tablespoon)
    • Shrimp Tacos
      • Frozen pre-cooked shrimp (thawed)
  • DIRECTIONS:
    • Ground chicken tacos
      1. Heat up 1 tablespoon of oil in a pan (medium heat)
      2. Put the ground chicken in the pan and cook for 5-7 minutes – breaking up the chicken (cook until no longer pink, and color turns a light brown)
      3. Add taco seasoning, sliced peppers, and green chilis – combine and cook for an additional 3 minutes until peppers are less firm
      4. Remove from heat and put on warmed tortillas
    • Shrimp tacos
      1. Put thawed, cooked shrimp in a pan over medium heat, sprinkle taco seasoning on it, cook for about a minute on each side.
      2. Remove from heat and serve on warmed tortillas
  • TIPS: You don’t need to make both types of tacos each night. Also, you can warm up tortillas in the microwave (about 15 seconds) or in a pan on the stove. I also prefer the mango slaw with the shrimp tacos, but my friends say it is good on everything! The shrimp tacos are awesome because you can make without a stove top (just toss them in taco seasoning and warm up for 30 seconds in the microwave).
  • Pros: Healthy, easy, and awesome for meal prep! I love all varieties of tacos, and you can use the protein for various dishes throughout the week. You can use the chicken on a salad, in pasta sauce, or a burrito. You can put the shrimp on salads, pasta, burritos, in quinoa bowls or just on it’s own! Also, the shrimp is precooked so just so easy to prep.
  • Cons: You can’t make ground chicken without a stovetop, but you can use a rotisserie chicken and make shredded chicken tacos and use a frozen fajita blend for the pepper mixture!
