Mac & Cheese

  • INGREDIENTS:
    • 1 cup of your choice of pasta (regular, whole grain, lentil)
    • 1 cup of water
    • Dash of salt
    • 1/4 cup of milk (or milk substitute!)
    • 1/4-1/2 shredded mac and cheese blend (or just cheddar or whatever you have)
    • Steamed veggies (I used broccoli and cauliflower, a handful of each)
    • Protein: shredded chicken, sausage etc
  • DIRECTIONS:
    1. Put 1 cup of pasta and 1 cup of water with a dash of salt in a microwavable bowl
    2. Microwave for 2 minutes, stir, and repeat for 6-8 minutes total (3-4 times stirring!)- stop when pasta is cooked through.
    3. Once pasta is complete, drain any excess water, and then add milk, cheese, veggies, protein, and stir. Microwave for 30 seconds and stir, keep microwaving at 30 second intervals and stirring until you get a cheese sauce consistency!
  • TIPS: The more cheese you add, the quicker you will get the “cheese sauce” consistency.
  • Pros: This is a quick and “healthier” version of the microwavable mac and cheese cups! I make this with lentil pasta for extra protein and more fiber to make this “comfort” food more nutritious. This recipe is roommate approved. Until I told her it was lentil pasta, she had no idea!
  • Cons: At the end of the day, you are eating a bunch of cheese and dairy!
