Mac & Cheese

  • INGREDIENTS:
    • Pasta- 4 cups (I used butternut squash based noodles for this, but use any type! I recommend a shell or elbow type of pasta)
    • Water – 4 cups
    • Dash of salt
    • 2 cups of shredded cheese (cheddar or a blend)
    • 1 cup of plain greek yogurt
    • OPTIONAL ADDITIONS: a dash of milk, butter, steamed cauliflower, bacon, ham, truffle seasoning
  • DIRECTIONS:
    1. In a large microwaveable dish, place the pasta, water, and a dash of salt. Microwave for 8-10 minutes at two minute intervals. Stir every two minutes, and stop when the noodles are cooked. The pasta will begin to absorb the water. This may take more than 8-10 minutes but keep the faith, it will work!
    2. Once your noodles are cooked, drain any excess water that didn’t get absorbed and add your cup of greek yogurt, 2 cups of cheddar cheese and stir. If you are adding butter and milk, this is the time!
    3. Top with more cheese if you want, microwave for an additional minute to ensure the cheese melts, and serve!
  • TIPS: If you want a creamier pasta, add 1-2 tablespoons of milk! I added 2 tablespoons of almond milk when I reheated the pasta, and it was very good. Also, your cook time will vary on the type of pasta you use. A way to make this dish a bit more healthy and add some fiber to it would be to half the amount of pasta and add 2 cups of steamed cauliflower!
  • Pros: This serves 4-5 people so perfect for meal prep, or for the holiday celebration in a hotel! It is made with greek yogurt and cheese so it has protein and probiotics. Also, this meal is made with three ingredients that are super versatile so you can use the left over supplies for other meals!
